This is my absolute FAVORITE salad dressing of all time!!! If you take anything from my recipe blog posts, take this one!! It goes well with anything and I feel no shame admitting to you that I literally lick my plate when I finish my salad it’s so good.
This recipe has been on my list to blog about for SUCH a long time, and I figure with everyone cooking so much right now is the perfect time to share it! When I bring this dressing with me to gatherings, people ALWAYS want to know the recipe. I feel really cool saying that I made it from scratch AND that there’s no sugar – only organic maple syrup – that gives it that yummy tartness. I can’t take credit however, because my mom taught it to me after she learned it from her favorite cookbook With Love, From Cynthia.
But I love this recipe so much that I like to make a lot of it at a time so I can enjoy it for days. So my recipe is actually a quadrupled version of my mom’s, so if you want to make a small batch first to see if you like it, hop over to her site!
1 cup canola oil * 1/2 cup maple syrup * juice of 4 lemons * 4 teaspoons salt * 6-8 cloves crushed garlic * fresh ground pepper to taste
Add all the ingredients together, shake it up, enjoy! I keep mine for a week or two in the fridge. The garlic and lemon smell will let you know when it’s time to make a fresh batch.
For a real simple meal, pour over baked chicken and kale and add some parmesan cheese on top! Also goes well with arugula. I mean honestly it goes well with anything. It could maybe also be a really great marinade? I’m not sure because I’ve never tried it, but if you do let me know! Enjoy!
